Mama Jane’s Mashers are a staple in the Stoddard Family home. They combine Stoddard Farms Russet potatoes, and the creamy power of half and half to make delicious, mashed potatoes that will satisfy your comfort food cravings! We can’t wait to see what you think!
5 lbs Stoddard Farms Russet Potatoes peeled, and halved (quarter if a large potato)
1-1/2 cups water
1 stick butter
1/2 cup half and half
salt & pepper
- Place potatoes into the Instant Pot, and add water. Secure the lid on the Instant Pot and seal the pressure vent. Set Instant Pot on manual for 13 minutes.
- When time is up, quick release steam and open pot. Pour off any remaining water. Run knife through potatoes to break them up.
- Microwave 1 stick of butter until almost melted. Add half and half to melted butter to warm the half and half (only 5-8 seconds). Pour the mixture over the potatoes.
- GRADUALLY mix with a hand mixer until potatoes reach a cream consistency. Salt and pepper to taste! Yum!
